Neil’s birthday was this week, which gave me an excuse to try another of the zillion cupcake recipes I have in the que just waiting for a holiday. These were light and summery and went perfectly with the cream cheese frosting. And they’re simple, too!

I love muffins, but they tend to be all sugary and carby and never really fill me up, so I don’t eat nearly as many as I would like to (which is approximately 2 per day). I’m constantly looking for/working on healthier muffin recipes, and good news! I found the most delicious, guiltless blueberry muffins ever designed by mankind!

Florida strawberries are in season and have been on sale at Publix lately, and I’ve been eating pint after pint to take advantage of the situation.  My family is coming into town today, and since they are a group of notorious pie-lovers, I made them this treat.  It’s my grandmother’s recipe, taken from our church cookbook.
